Super Quick Veggie Chili - Taco Stew thingy

~1 tbsp vegetable oil
3 small onions, chopped
~1 pound fake ground beef (I used Smart Ground original)
1/2 package of soyrizo
2 (15 ounce) cans pinto, kidney, black, (or mixed) beans, drained and rinsed
2 (15 ounce) cans white hominy, drained
2 (14.5 ounce) cans diced tomatoes
1 teaspoon chili powder
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon dried oregano
2 teaspoons ground cumin
Chili peppers to your level of spice liking, diced (I used about 10 small cayennes. You could probably even substitute a small can of diced green chiles.)

On high heat, sautee onions in oil until they start to brown (~ 5 min?). Dump everything else in. Add water to express your level of soup-stew affiliation. Simmer for 15-20 min.That's it.


Add lime juice, salt and pepper to taste. Top with cheese, tortilla chips, etc.
